I cannot keep bananas in my house.  My son and partner seem to eat them like they are water or oxygen.  I have to hide bananas set aside for bread.

But bananas have a secret.  A great little secret.  A little secret that my boys appreciate almost, no, much more than eating bananas just plain.

Bananas have high pectin.  What does this mean?  It means that you can make ice cream out of them!  Ice cream with only one ingredient.  Yes, you read right, only one ingredient.  No dairy, no sugar, completely vegan and so very inexpensive.

Banana ice cream

1 bunch bananas (5-6 bananas), ripe but not over ripe.

Peel the bananas, cut in half and place in a freezer safe container. Once frozen, remove from freezer and place in a food processor.

Blend. You may find that you need to let the bananas thaw for a few minutes before blending.

The bananas will naturally be the consistency of ice cream due to their pectin content.
Now, how easy was that!

To mix things up a bit, you could add some peanut butter, Nutella, chocolate chips or sauce, and/or nuts.
